Cinnamon Sour Cream Cake

















I've had a craving for sour cream cake for AGES. I love what sour cream does to a cake, it makes it so moist. Sour cream, combined with my love for cinnamon sounded like a wicked combination to me.

This was really easy to make too - cream the butter and sugar, add the eggs, add the vanilla, fold in flour, baking powder & soda then mix in the sour cream and bake. Too easy!! I haven't tried any of it yet - it look alot of will power to not have a slice last night when I baked it, but my mum is coming over for coffee this morning so I had to wait. Hope it tastes good!!

1/2 c. butter
1 c. sugar
2 eggs, unbeaten
1 tsp. vanilla
2 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. sour cream

Cream together butter and sugar. Add eggs, one at a time; then the vanilla. Sift together flour, baking powder, soda and salt; add to creamed mixture; mix thoroughly. Add sour cream LAST; mix well.

Bake at 350 degrees for 40 minutes.


As usual I made up my own icing recipe - it's just a glaze. 1 cup of icing sugar, 1 tsp cinnamon, 2 tablespoons of milk, 1 tsp vanilla. Mix until a good consistency to drizzle over the cake. If you need it thinner, add a bit of boiling water - but not too much!!

P.S I had enough of waiting to put my christmas tree up - so here it is. I'm so excited, I LOVE CHRISTMAS!!

I couldn't agree more about sour cream in cakes! I always try and keep a tub of it in the fridge for emergency cake baking! :P
