The Wedding Cake

At the end of January, my lovely brother and his equally lovely now wife got married.

It was SUCH a nice wedding - we couldn't have asked for better weather, we were infact very lucky as the wedding was down the south coast, and the day before and after the wedding were STINKING HOT. The day OF the wedding was slightly overcast and cool in the morning, and then the sun came out for the afternoon (it was an outside wedding so this was greatly appreciated).

The theme for the wedding was hydrangeas, and this is what I came up with for their cake:


The cake was caramel mudcake, and there were 3 different kinds of cupcakes - red velvet with cream cheese icing, vanilla with vanilla icing and chocolate with vanilla icing.

I'm very, very happy with the way it turned out - I was feeling a bit stressed in the lead up to it because I was working out of a kitchen that wasn't my own and I was concerned about the heat/weather conditions, but it all turned out great in the end.

V-Day cookies

I realise it's been well over 2 months since I've updated, and I apologise for that.

Things have been very insane - I moved house just before Christmas, to a place where I don't have internet. I also went overseas to Thailand and then came back to Sydney for my brother's wedding, where I was a bridesmaid, AND made their wedding cake (photos of which I shall post next time).

I've never particularly been one to celebrate valentines day in a big way - if you love someone, shouldn't you show it every day of the year, rather than on a specific date?? Why should Feb 14th be the day you bring roses to your loved when?? Why can't you do it just when you feel like it, just because?? I think it would be nicer to received a bunch of roses "just because" rather than because someone dictates that it's the thing to do, and that you should.

Or maybe, just maybe, I'm bitter I didn't receive any roses myself?? Nah, kidding, I couldn't care less.

ANYWAY here are some cookies I made to give to the people I love - so pretty much, I shared them with myself, and the girls I work with.

The cookies were ridiculously easy to make, and taste AMAZING. 
Vanilla sugar cookies:

1 cup butter
1 cup sugar
1 large egg
3 cups flour
pinch of salt

Beat the butter & sugar until pale and fluffy. Beat in egg. Sift the flour and salt, and add to the butter mixture a cup at a time. 

Turn on to a flour surface and knead until it's just come together. Put it in the fridge for about 30 mins, and then roll out between 2 pieces of baking paper (I love this, less mess, no dough getting stuck to your counter or your rolling pin!!). Cut out and bake in a preheated oven (160 degrees) for 10 - 12 mins. 

Let cool and ice with icing of your choice (I went with royal icing and sprinkles.....too easy!!)
